Sensory Education

Studio Tastings and Workshops

Gather around our communal oak counter for guided comparative flights. We examine single-estate pressings, harvest profiles, and traditional cellar acids in ninety-minute focused sittings.

Current Curriculum

Three Focused Sessions

Each intimate laboratory is limited to ten participants around our communal bench, preserving direct dialogue, tactile focus, and deliberate sensory evaluation across every flight.

Olive Oil Sensory Flight

Vinegar & Acid Blending

Knife Care Rituals

Evaluate four single-cultivar oils from Sicilian and Andalusian groves. We study polyphenol density, harvest timing, bitterness, and pepper finishes using standard cobalt tasting glasses.

Deconstruct barrel-aged vinegars, concentrated grape musts, and orchard ferments. Study how controlled acid balances elevate legumes, raw fish, and bitter braised greens in everyday cooking.

Hands-on waterstone sharpening for carbon and stainless blades. Practice traditional bevel maintenance, stropping techniques, and board geometry to extend tool longevity across generations.

Guided Comparative Flights

Take-Home Cellar Vials

Settle at the communal oak bench with cool well water and an initial review of estate harvest records and producer notes.

Calibrate sensory perception using neutral sourdough cubes, mineral water, and raw Granny Smith slices before tasting concentrated profiles.

Work through blind flight pairings to identify pressing methods, acid percentages, volatile aromas, and cellar aging markers without label bias.

Select vintage sample vials, comprehensive producer provenance dossiers, and cellar pairing guides to continue comparative practice at home.

Reserve Studio Counter Seats

Sessions run Friday and Saturday afternoons with strictly ten seats per sitting. Private group salon reservations are arranged upon request.
